名词和动词

第一个some是形容词，修饰coffee, 第二个 some是不定代词 ，to eat 是some的定语。

You can also say: Would you like some coffee to drink?
Although we normaly don't say that, because we know coffee is for drinking.
In the second question, however, it's "Would you like something", then it has to be said clearly if it's something to drink or to eat etc.

第二个应该是would u like something to eat

直接说动词不能作宾语就是了，又是这个又是那个的
